Hunky Chunky Walnut Brownies
What if I told you that I had a recipe for you that was chocolatey, chunky, crumbly messy perfection? Ooh yeah you heard me! These brownies hit all of those nails on the head and more. As always, these are super easy to make and will leave your kitchen smelling amazing. Enjoy!
Makes about 9-12 brownies (depending on what size you cut them into!)
¾ cup cacao
¾ cup almond meal
1/3 cup oat flour
1 teaspoon baking powder
½ cup walnuts, chopped into chunks
½ cup dark chocolate, chopped into chunks or ¼ cup cacao nibs
pinch of salt
1 teaspoon vanilla extract
1/3 cup rice malt syrup, maple syrup or honey
1/3 cup extra virgin olive oil
3 tablespoons milk of choice
1. Preheat your oven to 180 degrees Celcius conventional
2. In a large bowl, mix all of the dry ingredients together, including the walnuts and chocolate / cacao nibs
3. In a separate bowl, whisk all of the wet ingredients together
4. Pour the wet mix into the dry mix and gently stir until it’s all combined
4. Transfer the mix to a greased and lined 19cm x 19cm baking tray. It’ll be quite thick so you might want to press it in using your hands (wet your hands a little first as it helps make it less sticky!)
5. Pop it in the oven and baked for 18 minutes, or until a skewer inserted into the middle comes out mostly clean
6. Leave to cool for about 20 minutes, then transfer to a wire rack to finish cooling
7. Slice up and enjoy!
