Spiced Stewed Fruit with Rhubarb
Stewing up a batch of fruit and rhubarb is one of my favourite desserts. The warmth and spices always feel so nourishing and grounding. This recipe is lovely and easy to make, and is also a great way to use up fruit that’s getting a little over ripe. Not only does this make a wonderful dessert, it can also be teamed with things like porridge, muesli and yoghurt for a delicious breakfast or snack. Enjoy!
1 bunch rhubarb, cut into roughly 2cm pieces
1 apple, cut into roughly 2cm pieces
1 orange, cut into roughly 2cm pieces
1 cup frozen raspberries
1 teaspoon cinnamon
2cm piece of ginger root, cut into thin slices or grated
Pinch of nutmeg
1. In a large pot over low to medium heat, add the rhubarb, cinnamon, ginger, nutmeg and about 1 to 2 tablespoons of water. Stir, cover it with a lid and leave to cook for 10 minutes or until the rhubarb begins to soften, stirring occasionally.
2. Stir in the apple. Cover with the lid again and cook for another 10 minutes or so.
3. Stir in the orange and raspberries. Cover with the lid again and cook for a final 5 minutes or so.
4. Serve and enjoy! I love mine with some chopped up nuts, seeds or muesli on top. It’s also delicious with yoghurt or a drizzle of honey or maple syrup!
