Chocolate Sea Salt Pumpkin Seeds
Chocolate sea salt pumpkin seeds…need I say more? This recipe makes for an oh so tasty simple snack that’s full of magnesium – aka one of my favourite nutrients required in over 300 reactions in your body. Think energy, stress, anxiety, sleep, hormone production and communication, PMS, painful periods, constipation, cramps, spasms, sore muscles, nerve function, blood pressure, blood glucose regulation and loaaaads more. Make a batch of these babies and enjoy them as a snack, on top of porridge or yoghurt, as part of a delicious dessert…or however you darn well like! Enjoy!
1 cup pumpkin seeds
1 heaped tablespoon cacao
½ teaspoon cinnamon
Pinch of salt
Pinch of cayenne pepper (optional, if you want a bit of spice)
1 tablespoon coconut oil, melted
1. Preheat your oven to 160 degrees Celcius
2. Mix all the ingredients together in a bowl
3. Spread onto a lined baking tray, making sure the pumpkin seeds are in a single layer. Sprinkle over a touch more salt and cinnamon
4. Pop them into the oven and bake for 4 minutes. Take out the tray and give the mixture a stir, then spread it out into a single layer again and put them back into the oven for another 4 minutes
5. Take them out and allow them to cool (they’ll crisp up as they do). Enjoy!
P.S. I recommend storing these in a glass jar in the fridge :)
