Easy Raspberry Orange Jam

This deliciously tasty raspberry orange jam only takes about five minutes to make and can be enjoyed in an endless number of ways. Spread on a slice of your favourite bread, swirled into a warm bowl of oats, dolloped on top of yoghurt and muesli (like this delicious choc granola), paired with peanut butter on a piece of toast, stirred into some tasty overnight oats, plonked in the middle of jam drop cookies, spooned on pancakes or crepes, paired with some baking like these chunky walnut brownies or this infamous nut loaf, or however you please! P.S. I use raspberries here, but this recipe lends itself to all sorts of fruit – blackberries, blueberries, strawberries or cherries would all also be delicious. Enjoy!

Makes 1 jar of jam

2 cups frozen raspberries
Juice and zest of 1 orange 
4 tablespoons chia seeds
1 tablespoon maple syrup or sweetener of choice - optional 

1. In a small pot over medium heat, heat the raspberries until soft. Stir frequently and mash the raspberries gently with the spoon as you stir
2. Turn off the heat. Stir in the orange juice, orange zest, chia seeds and optional sweetener. Stir really well for a couple of minutes
3. Allow the jam to continue cooling. It’ll continue to get all thick and delicious as it cools.
4. Transfer the jam to a glass jar and store it in the fridge. Enjoy!

P.S. This delicious jam will keep in an airtight jar in the fridge for about a week :)
