Warming Pumpkin Baked Oats

Ooh I love autumn and all that it brings – the foods, the colours, the smells. If you’re looking for a new breakfast recipe to try, this is it! It includes one of my all time favourite parts of autumn – pumpkin – as well as some other favourites like warming spices and rolled oats. These baked oats are great absolutely delicious fresh out of the oven and will leave your kitchen smelling fantastic. They’re also great to make ahead of time if you want to take your breakfast with you or as a snack.

Serves 4-6

2 cups rolled oats
2 teaspoons freshly grated ginger
2 teaspoons cinnamon
¼ teaspoon nutmeg
1 teaspoon pumpkin pie spice (optional)
1 tablespoon flaxseed or LSA
½ cup Brazil nuts, pecans or walnuts, chopped
Generous pinch of salt
1/3 cup raisins (optional)
2/3 cup mashed roasted pumpkin
½ cup milk of choice
1 egg, whisked (or substitute for a flax egg)

1. Preheat your oven to 180 degrees Celcius 
2. Line a 20cm x 20cm baking tin
3. In a large bowl, mix together the oats, spices, flaxseed/LSA, nuts, salt and optional raisins
4. In a separate bowl, whisk together the pumpkin, milk and eggs
5. Pour the wet mixture into the dry mixture. Gently fold through until it’s all well combined
6. Transfer the mix into your baking tin
9. Bake for 20-25 minutes, or until a skewer inserted into the middle comes out clean and the top is golden
9. Sprinkle some cinnamon and nuts on top. Serve with whatever additions you wish! You could top it with some freshfruit (like berries, papaya or banana), this stewed fruit, yoghurt, nut butter or tahini. It’s also delicious with a warm drink like tea on the side. Enjoy!
