Creamy Overnight Oats

This bangin’ recipe has fast become a favourite breakfast of mine. It’s delicious, super easy to whip up and oh so convenient. P.S. the addition of pumpkin makes it super creamy adds an extra layer of yummy flavour. Enjoy!

Serves 1

1/3 cup rolled oats
1 scoop quality protein powder or collagen (ask me for protein powder recommendations if you’d like!)
1 heaped teaspoon chia seeds
1 heaped teaspoon sunflower seeds
½ teaspoon cinnamon
About 1/3 cup roasted pumpkin 
About ½ cup water or milk of choice (depending on the protein powder you use, you may want to use a bit less or more liquid)
Handful of frozen raspberries (or any berries you want!)
Handful of pumpkin seeds or hemp seeds (or any nuts or seeds you want!)

Optional - I love using a chocolate protein powder, or adding a teaspoon of cacao, to make this a delicious chocolatey breakfast!

1. Pop the oats, protein powder / collagen, chia seeds, sunflower seeds, cinnamon, pumpkin, water / milk and optional cacao into a jar (I usually like to use a leftover peanut butter jar or jam jar)
2. Stir with a small spoon until well combined
3.  Add the frozen berries on top
4. Pop the lid on the jar and pop it in the fridge overnight
5. In the morning, add some pumpkin seeds or hemp seeds on top
6.  Enjoy!
