Bangin' Banana Breakfast Bars

Do you sometimes wish for a yummy go-to breakfast that’s already sitting in your kitchen and waiting to be eaten? One that’s delicious, will have you feeling happy and energised as you start your day? Well, my friends, do I have the recipe for you! These breakfast bars make for a bangin’ breakfast (…or snack!). They’re no fuss, oh so tasty and are the perfect thing to make ahead of time so that you have easy options throughout the week. Think the likes of oats, chia, Brazil nuts, coconut, banana and loads more. Enjoy!

Bangin' Banana Breakfast Bars

Makes 8 bars

1 cup rolled oats
½ cup chia seeds
½ cup sunflower or pumpkin seeds (I like to do a mix of both)
½ cup Brazil nuts, chopped (or any other nuts)
¼ cup desiccated coconut
1 teaspoon cinnamon
pinch of salt
2 overripe bananas, mashed (about 1 cup)
2 tablespoons extra virgin olive oil
¼ cup milk of choice
1 tablespoon honey or rice malt syrup (optional, if you’d like extra sweetness!)

1. Preheat your oven to 180 degrees Celsius
2. In a large bowl, mix all the dry ingredients together
3. In a separate bowl, whisk all the wet ingredients together
4. Stir the wet mixture in to the dry mixture and mix until well combined. I like mixing it with my hands, it’s lots easier…and fun!
5. Transfer to a 21cm x 21cm greased and lined baking tray, then pop it into the oven for 35 minutes or until golden on top and a skewer inserted into the middle comes out clean
6. Allow to cool completely in the tray. Then slice up and enjoy!

P.S. store these bars in an airtight container in the fridge for about a week, or in the freezer for a few months.
