Nutty Chickpea Blondies
Here’s a creative take on traditional blondies - deliciously gooey and sweet, with an amazing nutty flavour. These are the perfect sweet delight adapted from the lovely Veggie Inspired!
Makes 8 blondies
400g can chickpeas, rinsed well and drained
¼ cup rolled oats
1 tablespoon almond flour
1 teaspoon cinnamon
½ teaspoon baking powder
¼ teaspoon baking soda
¼ cup coconut sugar
2 to 3 tablespoons milk of choice
2 teaspoons vanilla extract
2 tablespoons rice malt syrup, honey or maple syrup
¼ cup chopped nuts (such as almonds and walnuts)
1. Preheat your oven to 180 degrees Celsius fan forced
2. Blend all the ingredients, besides the nuts, in a food processor until smooth. It’ll be quite thick. If it's looking too dry, add another tablespoon of milk
3. Stir in the nuts
4. Transfer to a lined baking dish and bake for about 15 to 18 minutes. They’re cooked once they’re golden brown and firm to touch
5. Allow to cool, then sprinkle with some extra cinnamon. Slice and enjoy!
