Brownie Biscuits
The biscuits are deliciously soft, fluffy and oh so chocolatey, they’ll almost trick you into thinking they’re brownies!
Makes 10 biscuits
¾ cup wholemeal flour (for a gluten free option, try a mix of almond and oat flour)
⅓ cup cacao
½ teaspoon baking soda
½ cup coconut sugar
1 teaspoon vanilla extract
1 egg, beaten (for a vegan option, use a chia or flax egg)
2 teaspoons molasses
7 tablespoons extra virgin olive oil (you could also use coconut oil for a coconutty flavour)
¼ cup goji berries
¼ cup walnuts, chopped
1. Preheat your oven to 170 degrees Celsius conventional
2. Sift together the flour, cacao and baking soda. Whisk in the coconut sugar
3. In a separate bowl, whisk together the vanilla, egg, molasses and olive oil
4. Add the wet mixture to the dry mixture. When it’s almost all combined, add in the goji berries and walnuts, then finishing mixing. (If the mix is looking a little dry, add a drizzle more olive oil).
5. Place large spoonfuls of the mixture onto a lined baking tray. With wet fingers, press the biscuits so that they flatten ever so slightly, you want them to be quite thick though (which will account for their delicious soft and fluffy texture)
6. Bake for 8 - 10 minutes. Allow to cool on the tray for about 5 minutes, then transfer to a wire rack to finish cooling (or eat them while they’re still warm!). Enjoy!
