Best Ever Crackers

These are the best darn crackers ever. Inspired by the wonderful Elephantastic Vegan, they taste like pizza (amaaaazing) and make for such a yummy snack.

Makes 1 bowl of delicious crackers

1 cup gluten free flour – I used a mix of soy and lupin flour
1 teaspoon baking powder
2 tablespoons dried oregano
½ teaspoon paprika
1/3 teaspoon smoked paprika
dash of cracked black pepper
1/3 cup water
1 tablespoon tomato paste
1 teaspoon extra virgin olive oil

1. Preheat your oven to 200 degrees Celsius conventional
2. Whisk together all the dry ingredients
3. In a separate bowl, mix the tomato paste and water together
4. Add the tomato paste mix and olive oil to the dry ingredients
5. Mix together – you might like to knead it with your hands until a dough forms. If the dough is a bit wet and sticky just add some more flour, if it’s a little too dry then add some more olive oil
6. Roll out the dough on a lined baking tray, it should be about half a centimetre thick
7. Using a knife or pizza cutter, cut the dough into the size of the crackers you want
8. Bake in the oven for about 20 minutes or until golden and crispy
9. Serve and enjoy!
