Blissful Berry Yoghurt Bark
Pop your feet up and relax with a piece of this berry yoghurt bark…oh so blissful on a hot summer day (or any time of the year!). It’s also a great recipe to involve the little ones with – it only takes a handful of ingredients and is really easy to prepare. Feel free to get creative with all sorts of berries too – blueberries, strawberries and blackberries would also be deeeelicious.
1 cup plain Greek yoghurt or coconut yoghurt
1 cup raspberries (fresh or frozen)
1 tablespoon chia seeds
2 tablespoons desiccated coconut
3 tablespoons goji berries
1. In a large bowl, mix the yoghurt and raspberries together really well. Keep mixing until the raspberries start to break up and the mixture becomes a beautiful pink colour
2. Stir in the chia seeds and half of the desiccated coconut
3. Spread onto a tray lined with baking paper until it’s about 1cm thick
4. Sprinkle the rest of the coconut and the goji berries on top
5. Pop into the freezer to set for 2-3 hours. Once the bark is set, it’ll feel hard when you touch it. Gently break the bark into pieces using your hands. It’ll naturally snap into all different shapes and sizes.

P.S. You’ll want to store this in an airtight container in the freezer. Pull it out just before you want to serve it :)
