Grilled Veggie Sandwich
Here’s an easy, healthy and nutrient packed lunch idea – a classic sandwich with grilled veggies and spiced hummus. Yum!
Serves 1
2 slices of bread - e.g. rye, sourdough, wholegrain
few thin slices of eggplant, pumpkin and capsicum
few thin slices of tofu, optional
few leaves of silverbeet
2 tablespoons hummus
½ teaspoon cumin
½ teaspoon coriander
a dash of cracked black pepper
1. Heat a griddle over medium heat and grill the eggplant, pumpkin, capsicum and optional tofu (for about 5 minutes on either side depending on your stove top)
2. Steam the silverbeet for about 4 minutes until tender
3. Mix the hummus with the cumin, coriander and pepper
4. Toast the bread (this step is totally optional but I love how crispy it makes the sandwich when you bite into it).
5. Assemble every thing and tuck in, enjoy!
