Cardamom Apricot Granola

Want a breakfast option that's quick, delicious and a little different from the usual? Well, you're in for a treat with this Cardamom Apricot Granola! It's a delightful blend of warming spices and sweet, chewy apricots that’ll have you excited for breakfast every morning. Plus, it's easy to make ahead of time, so you can enjoy a no fuss scrumptious and energising start to your day (or, as always, enjoy it any time of day!). I love to serve mine with some fruit (like stewed apples or berries), Greek yoghurt and a warming drink on the side!

Makes 1 big batch

2 cups rolled oats
1 cup pumpkin seeds
1 cup sunflower seeds
1 cup chopped walnuts, pecans or almonds
2 tablespoons cinnamon
1 tablespoon cardamom
2 teaspoons fennel seeds
½ teaspoon salt
1 cup dried apricot
2/3 cup coconut oil
½ cup sweetener - maple syrup, rice malt syrup or honey

1. Preheat your oven to 160 degrees Celcius conventional
2. Combine all the ingredients, except the coconut oil and sweetener, in a large bowl
3. Melt the coconut oil and sweetener in a small pot over low heat on the stove
4. Stir the wet mixture into the dry mixture
5. Spread the mix evenly over 2 lined baking trays
6. Bake for about 15 minutes. Take the tray out at the 10 minute mark and use a spoon to toss the muesli, then spread it flat again and pop it back in for the last 5 minutes
7. Allow to cool completely on the tray, then enjoy! Best stored in an airtight container :)
