Blueberry Oat Pancakes
Pancakes are a classic favourite breakfast – they’re fun to make and even more fun to eat! I love how there are so many ways to change them up and these babies include a classic combination of cinnamon, oats and blueberries. Enjoy!
Serves 1
1 ½ scoops (30g) plain protein powder *
¼ cup rolled oats
1 teaspoon cinnamon
60ml almond milk or milk or choice
handful of blueberries
1. Mix the protein powder, oats and cinnamon in a bowl
2. Whisk in the milk, then fold through the blueberries
3. Heat a pan to medium heat and use a drizzle of extra virgin olive oil to coat the pan and prevent sticking
4. For each pancake, ladle one large spoonful of the mixture into the pan
5. Let cook until bubbles begin to form (about 2 to 3 minutes depending on your stove top), then flip the pancakes and cook on the other side
6. Take off the heat and serve with toppings of your liking – I love fresh berries, crushed nuts, a dusting of cinnamon or even a sprinkle of muesli. Enjoy!
P.S. this should make about 5 small pancakes, so you might need to use two pans or cook them in two separate batches!
* I use a brown rice protein powder, which I find gives the pancakes a good consistency. Using a different type of protein powder (like whey, pea or hemp) might yield a different result!
