Berry Banana Chia Pudding

This chia pudding is an awesome meal to prepare the night before and have for breakfast the next morning...for work, for uni or for any occasion! Chia seeds are an excellent source of protein, fats, fibre and more. They also host an impressive list of health benefits, one of my favourites being digestive health.

Serves 1

2 tablespoons chia seeds
2 tablespoons rolled oats
1 banana, mashed
125ml almond or coconut milk
handful of blueberries
toppings - berries, desiccated coconut, muesli, cacao nibs, a dollop of nut butter or anything else you’d like!

1. Whisk the chia seeds, oats, banana and milk in a bowl
2. Stir in the berries, then put the mixture in the fridge. Leave it to set for at least a few hours or overnight
4. When you're ready, top with your desired toppings. I chose sliced strawberries and a sprinkle of desiccated coconut for this pudding. Enjoy!
