Baked Pancakes
I recently discovered something amazing…baked pancakes! I decided to try cooking my pancakes in the oven one day when a pan just seemed like too much effort…and they’re like little pillows of heaven. These pancakes also include some of my favourite ingredients to cook with – bananas, cinnamon and LSA. The end result? Pancakes that are deliciously soft nutritional powerhouses. So go on, get your pancake on!
Makes about 5 pancakes
1 ½ scoops (4 tablespoons) plain protein powder *
3 tablespoons tigernut flour (or substitute with flour of choice)
1 tablespoon LSA
¼ teaspoon cinnamon
About half a banana, mashed
60ml milk or choice
1. Preheat the oven to 180 degrees Celsius
2. Whisk together all the dry ingredients
3. Add the mashed banana and milk, then stir to combine
4. Let the mixture sit for about 5 minutes to thicken up
5. Blob big spoonfuls of the mixture onto a lined baking tray, you should be able to make about 5 pancakes depending on what size you like
6. Bake for about 10 minutes or until golden and fluffy
7. Serve with toppings of your choice – I loved freshly chopped fruit with a sprinkle of LSA
* I use a brown rice protein powder, which I find gives the pancakes a good consistency. Using a different type of protein powder (like whey, pea or hemp) might yield a different result!
