Golden Tahini Biscuits
A little while ago I came across these biscuits by Nourish Not Punish and damnnn they were delicious! Those amazing morsels inspired this recipe, which uses a similar base with some special additions – ginger, orange and pecans. They’re beautifully golden, are rich in calcium (think strong bones and teeth amongst other things), are fuss free and super easy to make, aaand taste insanely good. My oh my, what more could you want!
Makes about 10 biscuits
¾ cup almond meal
2 teaspoons baking powder
½ teaspoon dried ginger
1 tablespoon orange rind
⅓ cup unhulled tahini
¼ cup maple syrup
squeeze of orange juice
handful of pecans, finely chopped or crushed (I pulsed mine roughly in my blender)
1. Preheat oven to 180 degrees Celsius conventional
2. Combine the almond meal, baking powder, ginger and orange rind
3. In a separate bowl, whisk together the tahini, maple syrup and orange juice
4. Stir the wet ingredients into the dried ingredients
5. Place spoonfuls onto a lined baking tray, then press down the tops with your fingers (it’s easier if your hands are a little wet)
6. Sprinkle some the pecans on each biscuit
7. Bake in the oven for 8 to 12 minutes or until golden (keep a close eye on them as they can burn quickly)
