Christmas Ginger Spiced Nut Mix
These ginger spiced nuts are the perfect Christmas accompaniment. The mix of toasted nuts and spice tastes oh so festive…oh and they make the house smell beautifully Christmassy too! I love the idea of making a big batch and jarring them up as Christmas presents to give to loved ones. They’re also a delicious festive snack or an addition to the Christmas table. So go on, get your spice on!
½ cup pecans
½ cup walnuts
½ cup Brazil nuts
½ cup hazlenuts
¼ cup pumpkin seeds
¼ cup sunflower seeds
¼ cup desiccated or flaked coconut
1 heaped tablespoon finely grated ginger root
1 heaped teaspoon ground ginger
1 teaspoon cinnamon
pinch of cardamom
pinch of nutmeg
pinch of salt
1 ½ tablespoons coconut oil
1 tablespoon honey, maple syrup or rice malt syrup
1/3 cup inca berries (optional)
1. Preheat your oven to 170 degrees Celcius conventional.
2.Roughly chop the nuts. I like to chop mine into different sizes – I keep some whole, chop some in half, and chop some into smaller pieces. Set aside.
3. Place the coconut oil, sweetener and grated ginger root into a pot. Heat gently over low heat for 2 - 3 minutes. Take off the heat and stir through the spices, salt and coconut. Add the nuts and stir to coat them.
4. Spread the mixture onto a lined baking tray in a single layer.
5. Pop it into the oven and bake for 10 minutes, tossing them at the 5 minute mark to ensure they roast evenly. Keep a close eye on them as they can burn quickly!
6. Take them out of the oven and allow to cool (they’ll harden as they cool). Once cooled, stir in the inca berries. Enjoy!
