Chunky Pumpkin Biscuits
Pumpkin is one of my favourite things to bake with, and teamed with chunks of walnut and dark chocolate, these pumpkin biscuits are an absolute must! They also feature warming pumpkin spice and are no fuss to make.
½ cup roasted mashed pumpkin
1 ½ tablespoons pumpkin pie spice
½ cup rolled oats
¼ cup ground flax
1 teaspoon vanilla extract
1 teaspoon baking powder
1/3 walnuts, chopped
1/3 dark chocolate chunks (optional, but highly recommended!)
1. Preheat oven to 180 degrees Celcius conventional
2. Combine everything together in a mixng bowl
3. Place large spoonfuls onto a lined baking tray and flatten slightly
4. Bake for 10-15 minutes, or until lovely and golden
5. Enjoy!
