Ultimate Choc Chip Cookies
Ooh do I have a recipe for you. These bad boys are full of chocolatey, salty, chewy yet soft and crispy deliciousness. Aka the ultimate combination for choc chip cookies…enough said! Whip these up on a lazy afternoon, pop your feet up and enjoy. Or you know…eat them any way you want!
Makes 9 cookies
1 ¼ cups almond meal
1 cup oat flour
1 teaspoon cinnamon
1 teaspoon baking powder
½ teaspoon sea salt
100g dark choc, cut into chunks
1 teaspoon vanilla extract
1/3 cup extra virgin olive oil
1/3 cup maple syrup
1. Preheat your oven to 180 degrees Celsius
2. In a large mixing bowl, combine dry ingredients, including the dark choc chunks
3. In a separate bowl, whisk together the wet ingredients
4. Pour the wet mixture into the dry mixture and gently stir until well combined
5. Place spoonfuls onto a lined baking tray and flatten slightly with your hands (it helps if your hands are a little wet!)
6. Sprinkle a tiny bit more salt over the top of each cookies
7. Pop them in the oven and bake for 12-15 minutes or until golden and your kitchen smells deeeelicious
8. Leave them to cool on the baking tray for about 15 minutes, then transfer to a wire rack to finish cooling (or enjoy one while still warm…so yum)
