Choc Banana Loaf
I was recently really craving a choc banana loaf and this beauty is what resulted! It’s an awesome blend of sweet and earthy, and the addition of cacao nibs are the perfect final touch. Top tip – toast a slice and enjoy it with a mug of tea. Yum!
1 1/2 cups oat flour
1/2 cup cacao
2 teaspoons baking powder
large pinch of salt
1/2 cup cacao nibs
1/4 cup milk of choice
2 large overripe bananas, mashed (about 1 cup) *
2 eggs, whisked
2 tablespoons maple syrup, rice malt syrup or honey
1 teaspoon vanilla extract
* The riper the bananas, the sweeter the loaf will be
1. Preheat your oven to 180 degrees Celsius
2. In a large bowl, mix together the dry ingredients (including the cacao nibs)
3. In a separate bowl, mix together the wet ingredients
4. Stir the wet mixture into the dry mixture. Gently stir until well combined
5. Transfer the mixture into a greased and lined loaf tin (about 21cm x 11cm). Sprinkle a few more cacao nibs on top of you like
6. Pop into the oven and bake for 45-55 minutes or until a skewer inserted into the middle comes out clean
7. Allow to cool for about 20 mins in the tin (this is important as it’ll continue to cook a bit more with the residual heat)
8. Transfer to a wire rack to finish cooling.
