Apple Crumble

Who doesn't love an apple crumble? I especially love baking this in the cooler months as it provides warmth (in both temperature and spice) and feels so cosy and nourishing. I don’t know about you, but I feel like a crumble isn’t really a crumble if there aren’t oats in the topping (as well as cinnamon and nuts too). This recipe delivers it all!

Apple Crumble

Apple mixture
4 apples, chopped into chunks 
1 teaspoon cinnamon
Squeeze of lemon

Topping
1 cup rolled oats
½ cup desiccated coconut
½ cup mix of raw unsalted nuts & seeds – I love pumpkin and sunflower seeds, chopped walnuts and chopped almonds
1 teaspoon cinnamon
2 tablespoons coconut oil, melted
1-2 tablespoons honey, rice malt syrup or maple syrup

1. Preheat oven to 180 degrees Celsius.
2.  Add the apples, cinnamon, lemon and a dash of water to a medium sized pot. Cover and cook over low heat for about 10 minutes or until the apple begin to soften, stirring occasionally.
3. Transfer the apples to a medium sized baking dish (about 17cm x 17cm).
4. In a large bowl, mix together the oats, coconut, nuts/seeds and extra teaspoon of cinnamon. Stir in the coconut oil and sweetener.
5. Add the topping mixture on top of the apples
6. Bake for 15-30 minutes, until the topping starts to brown (the cooking time will depend largely on your oven).
