No-Bake Apple Muesli Bites
These no-bake apple muesli bites are a fun, grab-and-go snack that’s totally satisfying. With just a few simple ingredients, you can whip them up in no time and let the fridge do the rest! Perfect for when you want a tasty pick-me-up!
Makes about 18 bites
3 apples, grated or finely chopped
1 cup muesli (Carmen’s Fruit Free is my fave, so yum)
3 tablespoons desiccated coconut
1 teaspoon cinnamon
1/2 teaspoon salt
¼ cup tahini
2 tablespoons coconut oil
1. In a bowl, mix the grated apple, muesli, desiccated coconut, cinnamon and salt. Set it aside
2. In a small pot, melt the tahini and coconut oil together, stirring until well combined
3. Stir the wet mixture into the dry mixture. Let it sit for about 10 minutes (this will let the muesli to absorb the moisture)
4. Spoon the mixture into greased or lined mini muffin tins, pressing down firmly (if you don’t have mini muffin tins, use normal muffin tins and only half fill them, or simply pop spoonfuls of the mixture onto a lined oven tray)
5. Refrigerate or freeze for at least 2 hours until set. Pop them in the fridge for a soft and chewy version, or in the freezer for a deliciously crunchy option :)
