Salmon Potato Patties
These salmon potato patties are great to whip up on a weeknight for an easy, delicious and satisfying dinner. Any leftovers make for an excellent lunch the next day too. I also love them for meal prepping for the week ahead. Here are just a few reasons why I love this recipe - they’re easy to make with ingredients you’ll probably already have, canned salmon is rich in omega 3 (an essential nutrient that many of us don’t get enough of) and loads of other nutrients, potato is an awesome veggie and rich source of minerals like potassium, and the parsley and paprika add to the already awesome flavour. Serve them with a bunch of roasted veggies, a big juicy salad, some delicious steamed greens, in a wrap, on a sandwich…the list goes on!
Makes about 12 patties
1 large can salmon, drained
2 medium potatoes (about 300g)
1 small zucchini, grated
1/3 bunch parsley, finely chopped
1 teaspoon paprika
Good pinch of salt and and pepper
Generous squeeze of lemon juice
1. Preheat your oven to 180 degrees Celsius
2. Chop the potatoes into small chunks and put them on to steam for about 20 mins or until cooked through
3. Put all the ingredients in a large bowl and mash together (I like using a fork so it’s mainly all mashed together with a few chunky bits of potato)
4. Use your hands to make into patty shapes and put onto a baking tray lined with baking paper
5. Pop in the oven and cook for about 25 minutes or until golden. Enjoy!
