Pumpkin Breakfast Bowl
Call me crazy but I think I just discovered my current favourite breakfast, and it involves a big bowl of pumpkin. Pumpkin is one of my all time favourite vegetables – it’s delicious, versatile, full of the important antioxidant beta-carotene, vitamin c, fibre, and plenty of other nutrients...and it’s in season! This breakfast bowl is super easy to put together and feels so nourishing and cosy to eat on a cool Autumn morning.
Serves 1
Approx 250g baked pumpkin
Fresh berries and/or banana
A generous dollop of good quality plain yoghurt
Small handful of your favourite muesli (this recipe would go perfectly!)
Small handful of nuts or seeds
Spice mix – I use a mix of cinnamon, nutmeg and cardamom
1. Simply put all your ingredients together in a bowl – I like to put the pumpkin on the bottom, then the berries/banana, followed by the yoghurt, and finally the muesli, nuts/seeds and spices sprinkled on top
2. Enjoy!
