Gooey Raspberry Almond Slice
Put your hands up if you love an ooey gooey texture. Put them up again if you love the earthiness of almonds mixed with the sweetness of raspberries. Well do I have the recipe for you...this slice has it all! Enjoy!
1 ½ cups almond meal
2 teaspoons baking powder
1/3 cup almond butter
¼ cup rice malt syrup, maple syrup or honey
2 tablespoons milk of choice (add an extra 1-2 tablespoons if the mixture is a bit dry)
1 teaspoon vanilla extract
½ cup raspberries
1. Preheat your oven to 170 degrees Celsius
2. Combine the almond meal and baking powder together in a bowl
3. In a separate bowl, whisk together the almond butter, milk, vanilla extract and sweetener. If the mixture is a bit dry, gradually add 1-2 extra tablespoons of milk
4. Gently stir the wet mixture into the dry mixture
5. Fold through the raspberries
6. Transfer the mixture into a lined baking tray (about 19 x 19 cm)
7. Cook for 20-25 minutes, or until a skewer inserted into the centre comes out clean (it’ll go quite a dark golden colour too)
8. Leave to cool in the tray for about 15 minutes minutes (this is important – it’ll help the slice finish cooking!). Then transfer to a cooling rack to continue cooling. Enjoy!
