Choc Chia Pudding - 6 Ways
This is one of my go-to desserts, it’s the perfect little thing if you’re feeling like a little chocolate something. One thing I love about this recipe is that you can adapt it in so many ways to change around the flavours, anything from choc mint to mocha! I must admit, my favourite way is nice and simple without any added extras, probably because of my pure love for decadent chocolate flavours!
Serves 1 to 2
2 heaped tablespoons chia seeds
2 tablespoons cacao
1 tablespoon cacao nibs
80ml milk of choice
Drizzle of maple syrup, optional
Optional flavour variations
- Jaffa – add 1 tablespoon grated orange rind and 2 teaspoons fresh orange juice
- Coconut rough – add 1 heaped tablespoon desiccated coconut and use coconut milk as your milk
- Ferrero Roche – add 1 tablespoon chopped hazelnuts and use hazelnut milk as your milk
- Choc mint – add 2 drops food grade peppermint oil
- Mocha – add 1 teaspoon coffee
- Cherry ripe – add 1 tablespoon desiccated coconut, use coconut milk as your milk and a handful of chopped cherries
1. Put the chia, cacao, milk and optional maple syrup in a bowl
2. Whisk thoroughly to combine
3. Stir in the cacao nibs and any optional extras you’re adding
4. Divide into two small bowls or glasses, then pop in the fridge to set for a few hours or overnight
5. Enjoy!
