Zingy Herby Spiced Potato Wedges

These herby spiced potato wedges are such a hit! They're loaded with flavour and oh so satisfying. Nutritionally speaking, potatoes are often thought of as 'unhealthy', however they're an excellent source of potassium, silica, B6, fibre and more. Plus, they're delicious! My favourite way to enjoy potatoes is by roasting them - so nourishing, grounding and yummy. Add a zingy herb and spice blend like in this recipe, and you're onto a sure fire winner!

Makes 1 large delicious bowl of wedges

3 medium potatoes (about 500g)
Extra virgin olive oil
1 heaped teaspoon paprika
pinch of cayenne pepper
1 heaped teaspoon dried thyme
½ teaspoon dried oregano
¼ teaspoon dried marjoram
very generous pinch of salt
very generous pinch of pepper

1. Preheat your oven to 180 degrees Celcius fan forced
2. Slice your potatoes into wedge shapes
3. Steam them for about 15-20 minutes or until you can poke a fork into them
4. Transfer the potatoes to a large mixing bowl, add a glug of olive oil (about a tablespoon) and all of the herbs, spices, salt and pepper
5. Use tongs or a large serving spoon to mix it all together and coat the potatoes in the deliciousness. This part is important, using tongs or a spoon will make the potatoes a bit broken and mushy…these bits will become amazingly crispy when they bake later!
6. Transfer the potatoes to an oiled or lined baking tray, making sure they’re in a single layer
7. Pop them into the oven for about 20-30 minutes. Take them out when your kitchen is smelling they’re all golden and crispy
8. Enjoy!
